Cooking Scrambled Hamburger with Broccoli and Cauliflower
A Frugal Lunch Plate: Ground Beef and Veggies
I made a quick, easy, and economical lunch today, by combining a few simple ingredients we had on hand in the house.
I started by browning a pound of hamburger in my cast iron skillet. When it was almost done, I drained off the liquids, and then added half of a large onion, chopped. I continued cooking this until the hamburger was cooked and the onion tender.
I took half of the mixture out and set it aside for another meal.
To the remaining meat and onion mixture, I added about two tablespoons of olive oil. I added a one pound bag of frozen broccoli and cauliflower, after cutting the larger chunks into bite sized pieces.
While this was cooking, I finely minced a peach pit size piece of fresh ginger root. I added the ginger and continued cooking until the broccoli stems were tender.
I quickly plated this into two servings. I then put two slices of lightly buttered bread into the hot pan. These toasted up quickly, so everything was served hot.
I accompanied it with some fresh pineapple chunks, which we had purchased on sale for only $1.00 each.
This scrambled hamburger with broccoli an cauliflower made an easy, flavorful, one-pan meal. I enjoyed making it; serving it to my wife; and eating it. It didn't take a lot of planning, and made a wonderful frugal lunch.
